Baking Roundup

If I blogged every time I baked some delicious protein noms then I’d have to create a separate blog for them, so gonna attempt to condense them down to a weekly/fortnightly blog post.  I’ll link recipes where I can, however I tend to tweak the recipe I’ve used.  any alterations will be mentioned though.

PROTEIN BAKING SUNDAY is officially now a thing, so we’ll begin there:

First up, Banana Nut Muffins, courtesy of Protein Pow! For mine I used 2 tablespoons of cashew butter & 1 tablespoon of peanut Butter.  It will mess with the Macros, but I shouldn’t imagine it’d be too much difference.  Mine were cupcake sized, as opposed to muffins.  Pictured above with some chocolate spread on the top.

Next (also from Protein Pow!) are Mini blueberry muffins – they’re not on the site, but solely on the app (which is a purchasable download) Er, oats, protein, egg, coconut flour & blueberries. Her recipe states to place two blueberries on top before going in to the oven, but I chose to cut mine up & add them to the mix.

And finally, baked oatmeal.  Sadly, I googled for a recipe on my phone & cannot find it when I search for it again.  I do remember what was in it though!  Oats, protein powder, coconut, eggs, nutmeg, cinnamon & chopped dates.  It went in a loaf tin and baked for what felt like forever, but wow! So good when it came out.  It was my breakfast for a good few days after baking!

MINI cashew & banana muffins – exactly the same as the ones mentioned above, but I made these in miniature.

Then, because I’m not a massive creature of habit (& because a friend linked the website so I *had* to try something from it,) yesterday I made lemon cookies!

I added poppy seeds to mine because Lemon & poppy is amazing! These are (so far) the closest to “proper cookie” kind of texture that I’ve found so far.  I made two batches, one with poppy seeds & one without.  I prefer the one with but they were both incredible.  I may attempt a carrot cake version in the future!

Mmmmmm Protein!

I keep posting images of what I’m eating to Instagram & Facebook, but not adding them here in such a routinely manner. However, I’ll only add here if I feel I can explain what I did in a way that makes cohesive sense.

Anyway. Tonight for dinner I made roast chicken breast, with roast peppers & quinoa.  Allow me to show you:

2015-02-23 21.55.44Mmmmmm.  So, quinoa (pronounced keen-wa) is a new thing for me-I’ve only been eating it since the start of the year & it’s an ideal alternative to pasta (in my opinion) I still don’t really eat a lot of carbs, some days it feels like that’s all I eat but then I don’t really touch them for days.  I can easily live without bread & pasta, so it doesn’t bother me.  Ahem, swift digression.

This is raw quinoa:

It’s a grain, wiki informs me it’s grown mainly for its edible seeds.  You take one part quinoa to 5 parts water & let it boil for 20 minutes.  I’m terrible with weights & measurements, so my measuring doll cups were out….I used half a cup to 2 & a half cups water.  I also added a vegetable stock cube to my water.

Then (because it’s easier) I use frozen, pre cut mixed peppers, apply oilve oil & garlic then in to the oven…..er, about 160 degrees & cut up chicken breast on another tray in the oven for about the same length of time.  I mixed them together once they were out the oven:

One thing I have noticed is that as I’ve gotten older my food has become a lot more varied.  For example, a few years ago I would not have entertained even looking at peppers, but now I love them…..red being my favourite!

Energy Berry Bites


I made these the other day after seeing them on the Neila Ray Website; they call them “Energy Ballz” but I have an aversion to calling anything that I eat a ball, for innuendo reasons.

They’re egg free & dairy free too!

These are my interpretation:

1: Ingredients

  • 1.5 cups of Oats (I used Gluten Free)
  • 2/3 cup of Peanut Butter (I used crunchy, cos f**k smooth)
  • 1/2 cup of dried fruit – I used a Berry mix.
  • 1 banana

2: Add the Oats to a bowl, then mash your banana – I used a potato ricer, its the business!

3: See? ZERO lumps 😀

4: Add your berries and peanut butter and stir til it’s thoroughly mixed together

5. Roll in to little balls

6: Keep going til you run out of mix, then refrigerate.

My mix made me 20 bites – According the the NR site it should make about 15, so mine must’ve been smaller.  They also say you could use different binding ingredients, as well as different fruits. So experimentation a go-go!!

Making Banana Pancakes….

“Take a Banana & put it in a pancake.  Maaaaaking pancaaaaaaakes!”

OK, so now you have Jake singing Bacon Pancaaaaaaaaaaaaaaaaaaaaaakes in your head I’ll show you how I made banana pancakes:

I found the recipe on-line, and after being on Dukan (The hubby & I did The Dukan Diet for about 6 months, er two years ago) I wasn’t overly enamoured with trying panfakes again, however I read a little more about them & decided they couldn’t be as vile as the Dukan versions.


  • Ripe Banana
  • 2 Medium Eggs
  • Protein Powder (I used Vanilla – I’d like to tell you how much I used, but I just chucked some in)

You’ll need something to mash your banana up – fork, potato ricer or a blender.

I used a blender – but a fork would work too, more of a workout with a fork I guess!

Once it’s all mixed it’s just a case of cooking them.  What I will say about cooking them, is they’re an absolute ball-ache to turn/flip over.  I ended up using a spatula as well as a maurice, however the internet tells me there is such a thing as an egg flipper; that’d probably work best.  I tend to make mini pancakes because, well, I’m just generally bad at flipping things in pans & smaller ones are easy.  If I’d have made these bigger I’d have ended up with banana flavoured scrambled egg!

Anyway, my single banana, two egg mix gave me 5 decent sized pancakes.

Drizzled with a little Agave. They look like pancakes don’t they?

They don’t taste like pancakes, but they’re quite palatable.  I’m thinking peanut butter would work excellently with them too!
